This is not pho! This is a traditional, Chinese Beef Noodle Soup: 红烧牛肉面 hong shao niu rou mian.
This rich, beefy, lick-the-bowl-clean broth is made by simmering beef in a blend of Chinese herbs and spices for over 12 hours. We then add baby bok choy, chunks of beef, and Chinese noodles to make it a meal.
Choose rice noodles if you prefer, but don't ask for gluten-free. This dish contains soy sauce, and we can't take it out.
