Glycyrrhizin is the name of the sweet substance in licorice root. This chemical, only in the root of the licorice plant, is 50 times as sweet as sugar. The distinctive flavor of licorice root makes it a popular additive to baked confections, liqueurs, teas, ice cream and candies.
